The 2nd entry in Lance’s “Indigo” brand was a hot spot in Maplewood, NJ: Chef-Owner-GM Lance Knowling extended his successful brand to a new restaurant designed particularly for the context of 2008-09. “IKB” was his most recent take on industrial chic style in picturesque suburbia, with diverse seasonal menus including selected Indigo classics, a 25-foot-long poured concrete bar, cozy lounge, and value pricing that attracted visitors of every age.
In July 2010, Lance sold his partnership to his partner in order to focus on current and future projects in his consulting firm, Lance Knowling Designs. His ‘Indigo’ brand was not retained in the transition, so this Maplewood Village restaurant rebranded with a new name and menu effective August 2010.

THE ONE THAT STARTED IT ALL: Chef-Owner Lance Knowling
began his success story as an independent
operator with the February 2002 opening
of Indigo Smoke, “Kansas City BBQ and
Soul Food Boutique.” In its eight-year history, this first brand
for Lance established his reputation in the state of New Jersey as an accomplished
chef who also delivers on the restaurant concept/design and business parts
of the equation.
